Devil’s Cut is made with the same ingredients (mash bill) used in their Whiskey War, except made as a beer. Once the beer was ready, it was then transferred into 22 High Bank Whisky War oak Barrels and aged for 24+ months. Big wood, Big flavour.
While distillers refer to the spirits that evaporate during aging as the ‘Angel’s Share’, the Devil’s Cut’ are the spirits which are left deep in the porous crannies of the oak after the barrel has been emptied. The depth and complexity that comes from this liquid extracted from the deep inside the barrel along with the natural flavours of the week and char lends our collaboration with High Bank Distillery its distinct colour, aroma and flavours.
Look for deep fig, green apple, raisin and caramel flavours with a creamy mouthfeel that belies its strength. The finish is fruity with a noticeable, embracing alcohol warmth.
